Owners Philippe and Monica Verpiand have fashioned a friendly French restaurant in the Santaluz community. Cavaillon might seem a bit off the beaten path, but it's quite easy to get to from Del Mar, Rancho Santa Fe, State Route 56 or the I-15. The trip is well worth the effort, for this French-born and -trained chef offers an inviting mix of soul-satisfying classics in an unpretentious atmosphere. Verpiand worked his way up the culinary ladder in France, spending time at a number of top restaurants before becoming chef de cuisine at La Terrasse de l'Assiette; his first position in the United States was chef de cuisine at Tapenade in nearby La Jolla. Verpiand's subtle but decadent seared duck foie gras with pineapple and red bell pepper chutney sets the tone. The pencil thin-asparagus appetizer is cooked al dente and topped with a tart port wine sauce, a poached egg and shaved black truffle. The rich English peas, beech mushrooms and asparagus risotto is served in a rustic crock and flavored with aged Reggiano. Sauces are exceptional here. Standout entrées include the Maple Leaf duck duo with polenta and green lentils; and the five-hour braised short ribs with butternut squash mousseline. Verpiand simultaneously pleases the palate and the eye with his artistic creations. Tucked in the folds of French crêpes are apples and caramel, while pistachio profiteroles are drizzled with hot chocolate sauce. French and California selections make up most of the wine list, and prices are surprisingly moderate.
