But now that Spain's favorite dishes are so popular, the menu is getting its due respect. Nibble on sweet dates stuffed with Cabrales blue cheese or green mussels in olive oil and lemon with Serrano pepper salsa. We prefer to skip the obvious tourists' choice of paella and enjoy the shrimp with hazelnut-brandy cream sauce, stewed white beans and chorizo fabada, or the lemony chicken-fig brochette with a porron of fruity sangría. The flat iron steak goes exotic in a Moorish spice dry rub with shallot butter while Basque rabbit stews in fresh rosemary, thyme and Rioja red wine sauce.
