Named after the river which winds through Colorado's Sawatch Mountains and the town of Aspen, this Southwestern-inspired spot serves up lamb, chicken, beef, pork and fresh fish entrées all prepared by a wood-fired rotisserie, open flame grill or by wood-oven roasting. Appetizers include Yucatan-style Gulf shrimp and green chile pork, while specialties list pork shoulder carnitas, cedar-planked salmon, bacon-wrapped pork tenderloin and the signature "Big Ass" burger.
