Exceptional wines are perhaps the prime reason for picking Fleming's over any of the other chain steakhouses---though even in that category the competition is challenging. Expect a list featuring numerous hard-to-find American boutique wines as well as renowned national and international labels, with up to 100 wines by the glass and an 80-label reserve list. The board of Prime steaks is not as extensive---the better to concentrate on quality, perhaps. Bone-in rib-eyes and New York strips, all seared by intensely high-heat cooking, are recommended for fullest flavor; peppercorn, Madeira and béarnaise sauces are available should you need them. Burgers are another option, with variations such as sliced filet mignon, ahi tuna and portobello mushrooms all fitting the format. Seafood selections include barbecue Scottish salmon filet and tuna "mignon" with poppy seed au poivre and a tomato sherry vinaigrette, both of which would stand up to big red wines. In addition to the steakhouse-standard sides of baked potato and creamed spinach, there are the marginally more inventive sugar snap peas with carrots and red onions and a chipotle cheddar mac 'n' cheese. Finish with a familiar dessert such as cheesecake, or branch out to frozen lemon gingersnap pie. Then contemplate retiring to the clubby bar for a premium port or a classy Cognac.
