Cool and contemporary Citrus is situated in a Spanish-named hotel whose style is said to be Tuscan, all in a city with Tex-Mex roots---so naturally the menu combines hints of Asia, Mexico and contemporary American cuisine. A tasting menu can be had in three- and four-course versions, though à la carte pricing is available. Starters can be as light as thin-sliced kampachi with scallion ponzu. A chilled cucumber-Meyer lemon soup with poached lobster might follow. A chicken fried steak made with South Texas antelope and served with chipotle mashed potatoes rings changes on a local classic, and Texas-farmed chicken meets up with roasted bluefoot chanterelles on the menu's third "course." Desserts comprise category four, with a dark chocolate gâteau plus chocolate gelato and a cinnamon croissant bread pudding standing out. The wine list includes alternative reds and whites, though Spain still seems to be under-represented, given the hotel's namesake. Perhaps a few more Iberian examples might encourage diners to linger in the minimal but likeable dining room instead of retreating to the hip and happening Vbar across the lobby.
