Shoki Ramen House Description:
Cramped and tiny, with Japanese knick-knacks and handwritten menu boards, this authentic noodle house seems more appropriate for a side street somewhere in old Kyoto, not downtown Sacramento. The menu is simple, the star the thick, al dente ramen noodles, a far cry from the fried-and-dried variety to which most Americans are accustomed. Diners choose the broth---sea salt or soy sauce---size, level of spice and toppings, which include thin-sliced pork, mushrooms, corn, egg or vegetables. Our favorite is the tantan men---a spicy broth with sesame-miso-infused minced meat. The broth is made in-house, simmered for hours, with no additives, and, like traditional noodle houses in Japan, a filling, steaming bowl of soup can be had for less than $10.
