This upscale steakhouse's interior is cosmopolitan, with textured glass details, muted neutral tones, and expansive windows opening onto a busy pedestrian area near the State Capitol. The location means it's a popular place for lobbyists to woo one another, and it is said to be one of Governor Arnold Schwarzenegger's favorite lunch spots. Diners are greeted with an oversize meat case, stocked with the corn-fed dry-aged beef for which Chops is known. The menu offers all the staples of a traditional steakhouse, from filet mignon to prime rib. Diners choose their cut and sauce, which includes a port wine demi-glace, French peppercorn or blue cheese cream. Plenty of fresh seafood is also available, as well as a daily fish special.
