They are the primary meats in the Muslim Halal diet. Try the lamb stir-fried with pickled napa cabbage and lamb with green onions. Chicken in brown sauce is a flash-fry based on sweet bean paste, a typical northern Chinese condiment. The knife-cut noodles are also interesting and fun to eat: they are slippery slivers sliced from a ball of dough that can go either with a soup or as a stir-fry.
