In the case of Rockville's Timpano Chophouse, looks are deceiving, for the outer wrapping looks the same as before---dark woods, open kitchen, lounge area, and Frank crooning in the background---but the menu has a totally different focus with an emphasis on paninis and pasta at lunch, flatbreads, steaks and pasta at night, plus several seafood and chef's selections. The whole flatbread idea has caught on in metro-area restaurants and for good reason: these let you pretend you are eating a hearty pizza with cheesy-herbed toppings, but minus the heavy crust. Instead, wisps of crisp baked bread serve as the base for several different topping choices, and the four-cheese mix is probably the best version. Lunch or dinner, pastas are sensible, well-priced options: try the wild mushroom mix with its generous portion of sautéed and seasoned mushrooms. A winner. For dieters, the salad selection, while not particularly offbeat, offers the expected Caesar plus a chopped dish with lots of Italian add-ons.
