Hillbilly Bar Bq Description:
Truckloads of Kentucky pecan and a bare bones cinderblock restaurant in the suburbs have done a lot to reinvigorate the New Orleans barbecue scene. For that we can thank Hillbilly Bar B Q proprietor and Kentucky native Larry Wyatt, who infuses pork shoulder, beef brisket, spare ribs and even hamburgers with glorious smoky flavor. Hillbilly's side dishes are unusually inspired, especially the cumin-spiced cabbage slaw and the cold mashed potato salad. Smoked chicken salad sandwiches and Hawg Dawgs---tidy hot dog, chili and cheese sandwiches---are two rarer treats, and two of our favorites.
