Fred & Steve's Steakhouse, owned by former NFL nose tackle Fred Smerlas and ex-linebacker Steve DeOssie, overcomes a corny location at the Twin River Casino (the former Lincoln Greyhound Park) and décor that includes football jerseys mounted in marquee cases to offer a classy and most satisfying dining experience. Fred & Steve's scores with its filet and porterhouse cuts. Portions are predictably generous, and couples should plan to share. Starters include the ample Tailgate Salad---topped with egg slices, juicy beefsteak tomatoes and niçoise olives---and a smooth sherried lobster bisque, poured over fresh lobster meat in a warm, flat bowl. Classic sides are well executed: the creamed corn is off-the-cob crunchy, while mashed red potatoes are mixed with cheddar, garlic, or smothered in onions---like the recommended Penfolds Shiraz, a good match for the properly prepared steaks.
