Baraco is a split concept Italian Restaurant offering a unique dining experience in Providence, Rhode Island. The name Bacaro comes from the Italian "Bacari", a regionally specific word from Venice for a wine bar, a gathering place for friends to meet and share in a quick bite and a glass of wine. The Venetians chose the word Baccari (plural) from Bacchus- the Roman god of Wine.
Bacaro includes an Enoteca (Italian Wine Bar), Salumeria & Cicchetteria on the first floor of their building and a full service dining room with an open kitchen on the second floor.
Bacaro's local culinary pedigree is evident in its wood-grilled pizzas. Chef Brian Kingsford and co-owner Jennifer Matta formerly worked at Al Forno, famous for its paper-thin-crust pizzas. What makes this riverfront restaurant stand out in its own right, however, is its deft blending of Italian dining traditions---salumeria, enoteca, cicchetteria---with the liberating ease of ordering tapas off a check-box menu, sushi-style. Grazers will enjoy picking from a menu of Italian tapas, cold snacks and hand-carved cured meats and exotic cheeses from the downstairs salumeria. We like the classic simplicity of noshing on sharp, slightly dry Carbonelli provolone drizzled with olive oil and paired with currant marmalade, fig jam, spiced nuts and honey. Prosciutto di Parma served with peach slivers and olive oil on a bed of rocket is a standout. The upstairs dining room, with its views of the river, city skyline, and working kitchen, is more appropriate for ordering off the regular menu. Silky veal bolognese over rigatoni and spaghettini with preserved lemons and sweet spring onions are both solid choices. Finishing with a brown-butter ice cream, sweet-but-nutty pistachio cake and a strawberry tart bravely resting on a celery bed is a fine ending.
