The dough has four ingredients---flour, water, salt and yeast---fermented for 24 hours. The toppings are the highest quality ingredients with nothing frozen, shredded or pre-sliced allowed. The oven is hot, hot, hot---900 degrees hot! These pizza craftspeople adhere to the old-school rules of Italian pizzaiolos. The result is a perfectly created pie. The plain version is simple: tomato, whole milk mozzarella, flor di latte, grana padano-pecorino romano, extra virgin olive oil. Work your way up from there, but more than three ingredients or two meats per pie is strictly forbidden. This trendy spot is usually packed with happy diners, and the patio is pleasant in summer. It's a good idea to get here early because when the dough runs out, the front door is locked. Apizza Scholls takes reservations for eight or more.
