Kimberly Paley, formerly a professional dancer, manages the front of the house with Nureyev's grace, while in the kitchen chef Vitaly Paley, once a concert pianist, hits all the right notes. The cooking is French with Northwest touches, presented in a frequently changing menu. The pair strives to keep the focus on local, organic and sustainable practices. No matter how simple the preparation, every ingredient is carefully chosen, and no dish leaves the kitchen that is not well executed and handsomely presented. For example, risotto is a creamy blend of Dungeness crab, corn, Parmesan cheese, and fragrant basil.
