Portlanders know this spot as one of the most pleasant places in town to partake in a rainy day snack. Founded and operated by Ken Forkish, it was only a matter of time before he moved from preparing restaurant fare and delved into making the staff of life. Familiar with the artisan bakeries of France, he fashioned his place after classic French pâtisseries and boulangeries that produce rustic loaves while instilling a sense of tradition in the community. His philosophy is simple and straightforward: use the finest fresh, local and organic ingredients and take no shortcuts. The result is heavenly baked goods. The croissants actually take three days to make---and are more than worth the wait. For lunch, enjoy one of several sandwiches including pulled pork on a ciabatta roll or the jambon: Oregon ham and Asiago cheese on a buttered baguette. There is also an ever-changing menu of fresh soups (except in summer) and salads. Monday is pizza night.
