It started out in the 1930's as a late-night food trough and watering hole for produce dockworkers. Today, Primanti Brothers is a Pittsburgh institution, one made famous by visiting celebrities, including superstar chefs. Actually, the owners have chained the concept, but the original shop, in the Strip District, has the most authentic ambience. Open 24/7, the place attracts a diverse clientele---after-hours party folk rubbing shoulders with the plaid flannel-denim crowd and the leather-clad-crash helmet set. At issue is a huge sandwich with a stuffing of meat, oozing cheese, tomatoes, coleslaw and french fries held between two slices of crusty Italian bread. Some complain that the chaining of the famous Primanti sandwich has shrunk the amount of meat delivered. But the greasy, tangy, salty and crunchy icon still embodies one honest and very large bite of the "burgh experience."
