Waiters bring steaming bowls of this noodle soup, which may be enjoyed simply with sliced beef, or may include brisket, flank steak, fat tendon and tripe. Then add fresh basil, bean sprouts, sliced peppers, and fresh lime to taste. For hot-heads there is an abundance of spicy condiments on each table to add some fire. There's no more satisfying quick lunch than a bowl of pho and a cup of thick, sweet Vietnamese coffee.
