Stephen Starr, with consulting chef Douglas Rodriguez of New York and the Rockwell Group, give us his concept of today's Cuba, with a nod to the past. The design team used a basic off-white palette, dramatically lit with a sexy red glow and a series of evocative Cuban photos in the background---a feast for the eyes. Start with a mojito and then move on to the varied ceviches (hamachi marinated in yuzu togarashi has an Asian flair) and Cuban dishes, especially the lechon asado (roast pork) with garlic-oregano mojo. The empanadas, stuffed with the likes of braised short ribs and manchego cheese, are first-rate. Choose from the selection of European and new world wines and have a chocolate "cigar" for dessert to stay in the mood.
