Southerners especially love to don fine threads and make an evening out of a simple meal. At this exquisitely turned-out dining room, keep your dressy attire handy to enjoy this bright, formal but lively establishment. You'll wear thin rhinestone straps or whatever it takes to savor the contemporary American fare from the hand of Daniel Zeal and crew. Wines chosen from the extensive, globally selected cellar add greatly to the table's pleasures, and the correct service is appropriately passionate. The food draws much from regional traditions while bringing a sophistication to the humblest ingredient. Zeal has chosen pristine foodstuffs from local suppliers, and finds loads of Southern ingredients for his dishes. The parade of elegantly designed plates showcases paintings of dish-appropriate sauces, such as a purée of chestnut and parsnip to enhance a seared slice of foie gras perched atop breast of roasted squab. The American Kobe Wagyu beef strip loin, with its delicately positioned embellishments, could come off as precious if mishandled or overdone, but on this plate, the jewel-like adornments were fine flavors and visuals. The cheese offerings featured some of the local Sweet Grass Dairy choices, such as a ripe grass-based cow's milk Green Hill, a Camembert-style cheese, along with international selections. Accompanying it was a most unusual butternut squash jam. Service generally reflects a fine balance of professionalism and warmth. It's no wonder heads of state have graced these tables.
