Restaurant Astier Description:
Situated in the centre of Paris, the Astier offers a varied menu of traditional French specialities.
Astier has been in operation since 1956, and that means something! This restaurant pioneered the "cuisine bistrotière" created by Mr. Astier and has carried on its merry way for many years. The décor and the cuisine draw as many locals as tourists---basically anyone who is fond of "plats canaille" and the classics. Benjamin Bajolle and his sound team have been trained by some of the best chefs. In this lively space, they regale patrons with marinated smoked herrings, pommes ratte en vinaigrette, thin tart of smoked eel with confit tomato, goatfish fillets en escabèche, and sliced eggplant confit and herbs coulis. Courses range from braised streaky bacon and sautéed rutabaga en cocotte to a classical dish of roasted rack of lamb with glazed carrots and parsley purée to creations like codfish in a crust of cured ham and sauce vierge. How Astier goes on! The wine list is impressive and is partly responsible for this restaurant's success. This establishment cares for its clients and the terroir.
