Bertrand Guéneron, ex-second of Alain Senderens during the time of Lucas Carton, runs this smart address, all dressed up in the warm colors of the south. The regionally-inspired menu highlights include sautéed shrimp and fennel salad, Espelette hot pepper calamari, Bayonnaise guinea fowl, and the unavoidable "béret basque" for dessert. Top-notch wines, mainly Basque.
