Many of the ingredients used (boletus and chanterelle mushrooms, truffles, homemade foie gras, etc.) are distinctly Southwestern. Chef Bruno Haeyaert uses these in dishes like duo of confit and duck filet with boletus mushrooms and omelette with winter black truffles.
