La Marée has a wainscotted dining room decked out with oversize Flemish paintings and a cuisine brimming with new life. Seafood naturally rates top billing at La Marée, a restaurant named for the tide, but the entirely traditional fare of the past has given way to glimpses of modern. Cast your eye down the long menu for classics such as the Belon oysters cooked in Champagne or the divine scampi roast with hazelnuts, or for modern fare such as the sea bass with chorizo and small herbed cod fritters, or red mullet fillets cooked on the grill served with basque risotto. The best of Burgundy and the best of Bordeaux are to be found in the gentleman's club atmosphere with its gentlemanly welcome and its old-world, pleasantly abetting service.
