Right across from the church Saint-Germain-des-Prés is a limestone building that no one would notice as anything special, so you might not realize that inside is La Société, a restaurant from the Costes family. The very chic and trendy space was designed by Christian Liaigre in a Zen-like style. One has to add that this place has not gone unnoticed by everyone, as you'll find all those who are connected in Paris: famous businessmen, movie producers, bankers and smart ladies. To top it all off, the waitresses even look like top models. Better know it once and for all: this is a deluxe brasserie. The names of the courses on the menu are more like statements: terrine de "luxe" of duck confit; côte de veau rôti "magnifique." Here, organic food has planted its battle flag and everything natural reigns---freshly made carrot juice, cold pressed walnut oil, cider vinegar and organic eggs, to name a few items. Two courses are worth a special mention because they are new to the menu of Costes restaurants: the tender and exquisitely tasty côte de veau rôtie, d'origine Limousine or Nivernaise, and the lard d'Ibaïona confit au piment d'Espelette, which is laquered with cider and balsamic vinegar. The Costes are unmistakably at the top of their game.
