Christian le Squer, formerly from Ledoyen, likes playing with words. For him ETC. is an acronym with a hidden meaning: Epicurean Traditional Cuisine. The concept here is to replace the expensive luxurious products with the refinements of a subtle technique and to contain the offerings within a short but cleverly elaborated menu. As a result, the grilled redfish and the smoked eggplant are delicious. The signature dish, the passion fruit blood pudding has won a reputation. Cooking times are adequate and service is professional. This is "haute cuisine" at a bargain price in a chic bistro décor. The "menu du marché" with two glasses of wine costs €68; A la carte €61.
