Here, Christophe Chabanel earned his first toque at the tender age of 22. Now, in these contemporary yellow-and-blue digs, Nicolas Angebault has succeeded him. The young chef serves a cuisine of his own; some plates that identify him include juiced sardines and apple compote, sea bream in an argile crust, licorice roast rack of lamb, and red berry soup "à la mélisse."
