Opened in Le Grand Hôtel in 1862, this classic has been adhering to a beloved Parisian café menu. But chef Laurent Delarbre, formerly of La Tour d'Argent, Lasserre and The Ritz, promises to bring the just-renovated mainstay into our era with new variants on French classics. Look for tofu tartare rubbing elbows with sole meunière on the menu.
