Le Commerce, the old Citroën factory's blue collar cafeteria, later became Café du Commerce and was renovated by the Guerrauds. In spite of its astonishing décor and its roof (opening out onto a splendid interior patio like at famous Lasserre) this attractive place was very little known. Etienne and Marie Guerraud are meat lovers and are especially fond of the beef from cows bred in Limousin in Central France. They have their own butcher, Pascal Pétard (69, rue de la Glacière, 75013 Paris; and 11, rue Saint-Ferdinand 75017 Paris and 37, av. Félix Faure), who selects for them four or five cuts of beef that he ages over three weeks in order to enhance both taste and tenderness; (in France, the use of tenderizer is prohibited). The pommes frites (french fries) are a delight, prepared as they should be in two different vats with two different oils. They also serve tête-de-veau (calf's head) and pot-au-feu de cochon (boiled hog with potatoes). Delicious desserts---grandmother's---are equally compelling.
