Slightly away from the Convention métro station, Julien Duboué renews the Southwest bistro cuisine with mastery. In his redone rustic establishment, this former chef of Carré des Feuillants and of Drouant regales Parisians come from the four corners of the Capital with well-rooted and inspired dishes. His dishes attest to this; try the blood sausage infused with apple and served in mustard, his sweetbreads stew with boletus mushrooms and carrots accompanying parmesan vermicelli, and apple tourtière. Those will the smallest appetites will be easily pleased with one of the 14 tapas and a glass of Txakoli. Menu around €40.
