Blue Coyote Grill Description:
This Southwestern-Mexican cuisine restaurant has a lively outdoor patio scene, where live strolling guitarists serenade the crowd. You can order colorful tidbits like blue and red taquitos or blue corn nachos. The fish tacos are stuffed with fresh marinated and grilled mahi mahi. One of the most unusual lunch dishes (and served only at lunchtime) is the Santa Fe torte---a lasagna made with layers of crêpes, roasted chicken, peppers, cheese and corn, served with New Mexico red chile sauce and sweet corn cake and garnished with Hawaiian papaya. For dinner, there's a handsome paella for two, but the fajitas reign supreme. The bar is known for its house wild coyote margarita, made with a generous helping of gold tequila, orange curaçao and fresh lime juice. After a few of those, you may find yourself howling like the titular prairie wolf.
