While the chicken, beef and pork here are first-rate, Old Hickory's distinctive sauce, simultaneously smoky, tangy and sweet, is just right for the mutton, a regional specialty. A fine prelude to a sandwich is a cup of another western Kentucky specialty, burgoo, a thick, gravy-like stew filled with tender meats vegetables and spices. Everything but french fries is made from scratch, including the kettle-cooked, pit-simmered barbecue beans; potato salad; chili; and coleslaw.
