As the former Queen of Bagelry in Kansas City, Gail Lozoff has a knack for yeast. These days, it's her doughy rounds of pizza---which are stone-fired crisp---rather than soft, yielding bagels that earn cred. The whole affair, from start to finish, involves a riot of chopping and pulling, blending and baking---all visible from the circular kitchen. Among the piping hot pies to try are the bianca, rossa and patate (roasted potato), or go for the fab melanzane (eggplant) and cipolla e chèvre (caramelized onions and goat cheese). The setting is pretty cool, too: local architects used industrial materials and dotted the space with bicycle parts for a quirky feel. Opt to dine alfresco in the bare-bulbed piazza weather permitting.
