Sabor Description:
Housed in a mustard-beige, three-story building accented with balconies and canopies, the romantic, sexy and intimate Sabor would be right at home in Miami's South Beach. To be seated in its deep scarlet dining room is to be transported to a place nearer the equator. Executive chef Alexis Lahens has special skill with ceviche---the specialty of the house. He offers it in infinite variety but none more creatively than a New Jersey-accented version using fresh, locally caught fluke with watermelon, pickled onion, yuzu, avocado and mustard oil. His kitchen also produces enticing dishes infused with heady spices and cooled with tropical fruits. Although Latino rules here, international accents should be noted: one example is Sabor's parrillada del mar for two---a veritable feast with crispy whole red snapper, grilled salmon, sugar cane skewered shrimp and mahi mahi with garlic-lime mojo, with side dishes of soy-ginger eggplant, chaufa rice made with soy sauce and bacon, and sweet plantains. Dishes, plated in large platters and bowls, are shared as they arrive rather than consumed in strict order course-by-course.
