Authentic Mexican home-cooking is what you'll find at Fonda San Carlos. Quesadillas here are hefty two-handers, the cheese softly melting within a lightly sautéed flour tortilla. Fresh guacamole, chunky with specks of tomato and aromatic with fresh onion and cilantro; deftly seasoned pico de gallo; and real Mexican cream round out the plate. Chicken-filled enchiladas are singularly fresh tasting, and the beans and rice are nicely seasoned. Fonda San Carlos gives serious attention to seafood. There are fat, plump raw oysters, clean and sweet-tasting. Shrimp fans who like it hot will zero in on the diablo shrimp. Molcajete is a dish that fills one of these eponymously named traditional stone containers with either a pound or half-pound of grilled skirt steak and roasted onions topped with queso fresco, avocado and assorted salsas. It's an unusual dish, one that you won't find in ordinary Mexican restaurants. Traditional desserts include an excellent flan. The wine-based margaritas are very tasty indeed. Georgia-born Ruben Rodriguez, Jr., who also owns Taquería Tecolote (meaning "owl") in Marietta, purchased the Fonda from its founder Carlos Chávez of Puras Tortas.
