As the sun sets, dig in to the huachinango naranja, pan-roasted red snapper atop spinach and served with a Champagne, orange and chipotle chile sauce. Or try the braised short rib-stuffed poblano relleno, wading in a yellow mole sauce and oozing with Gouda cheese. Round out the evening with a tequila tasting.
