SHO Shaun Hergatt feels like a restaurant from another era. Unfortunately, that era is not one that many restaurants hope to replicate: the 1980s. It's located in New York's Setai condos with a chef from Miami's Setai turning out vertical French cuisine with Australian accents. It is certainly a blast from the past, but one that, against all odds, is a success. Chef Shaun Hergatt explains that the Australian accents in his food are from his native land. The influence shows up in simple dishes like Kona kampachi with young ginger and Tasmanian ocean trout with kalamansi dressing. From roasted poussin to seared salmon with Thai basil froth, the ingredients here are high-quality and designed to impress. The space tries for the same, with Christofle silverware and an Asian-boardroom décor that screams "hostile takeover." The extensive and expensive wine list spans the globe with a few choice selections by the glass.
