Chef Pascal Olhats (Tradition by Pascal, Café Jardin) took over David Wilhelm's former French 75 (and Café Rouge) space in Fashion Island to create a fine French brasserie. The fin de siècle interior has been lightened up just a bit, giving this space even more irresistible Parisian charm with its cherry-wood moldings, tulip lights, red leather banquettes and art nouveau posters. Chef Olhats's menu is reflective of brasseries all over France, which serve a good variety of classic dishes at reasonable prices. Some start with hot and cold seafood dishes such as mussels, crevettes Provençal, oysters, crab legs and shrimp cassolette. Or, try the escargots, foie gras, saucisson Lyonnais or beef marrow. The French onion soup is also a good choice with its dark brown broth and melted Gruyère. As for mains, there are some lighter dishes (warm quiche Lorraine, chicken crêpes, a country-style omelet) and more robust choices (beef bourguignon, coq au vin, traditional cassoulet bean stew with sausage, pork and duck confit). Four kinds of steaks can be ordered here such as steak frites, and the onglet aux échalotes (hanger steak with green beans, potato gratin and shallot sauce). Desserts are just as well-crafted, like the fluffy and creamy Callebaut chocolate soufflé, a tangy tarte Tatin and seasonal berries with crème de cassis and sorbet. The wine list has been artfully chosen and features mostly excellent French varietals, but also some very good Napa and Sonoma selections.
