Sol Description:
This tropical-themed restaurant at the Hyatt Regency Newport Beach takes its inspiration from the Caribbean and other sultry climes. Sol specializes in rich, highly-spiced cuisine such as curried sea scallops or lump crab meat and nopal cactus cocktail. Try a main course of wood-grilled skirt steak served Cuban-style with rice, black beans and chimichurri sauce or Belize-style spiced chicken with achiote paste. The enormous broiled shrimp is bathed in a concoction of white wine, coconut milk, garlic and olive oil. The restaurant also serves breakfast and lunch, plus a Sunday buffet brunch.
