Founded as a private club in 1912, this Atlantic City institution has been updated and polished to a fine sheen. Look for upscale steakhouse fare complemented by seafood dishes and an extensive wine cellar with more than 1,000 selections. The beef is U.S. Prime and nicely seasoned with sea salt and coarsely ground black pepper before it is cooked in Knife & Fork's wood-fired grill. While the traditional fare is fine, there are some nice unexpected offerings such as a lobster spring roll with mustard drizzle and pan-seared diver scallop with cauliflower purée and porcini-leek cream. If you feel adventurous, you might try the french-fried beet chips. The service is practiced and the friendliness factor very high.
