That the design would have to differ significantly from the traditional steakhouse is understandable given that the Old Homestead---a classic chophouse---shares space at the glitzy Borgata Hotel Casino & Spa. But one would expect that with a David Rockwell design, the look would be notable; instead it's questionable. More Scandinavian and cafeteria-esque than the namesake chef's usual Southwestern bent, Bobby Flay Steak is a cavernous restaurant that offers very fine beef, chops and lobster at very high prices. The food is prepared with a generous hand. To Flay's credit, many dishes are a cut above even the best steakhouse menus with offerings such as porterhouse lamb chops with red wine sauce and mint pesto; and filet mignon Louisiana, with the tender cuts napped in a lush béarnaise laden with crawfish. Spicy Southwest rib-eye harkens back to the chef's roots and tantalizes with the fiery application of roasted red and green chilies. The wine cellar is notable with an extensive international list organized helpfully by type of food, such as "veal and fish reds" and "lobster whites." There is not much to choose from that is priced at less than $35 a bottle, but there are half-bottle options as well as wines by the glass. Desserts are simple and very appealing. Among the best is a dark chocolate crème brûlée with pistachio biscotti.
