Pizzerias are ubiquitous now, but Frank Pepe installed a brick oven and opened a storefront parlor in the heart of New Haven's Little Italy back in 1925, when pushcart vendors were the rule. Today, visitors happily line up for a taste of Pepe's legendary pies, known for their thin yet doughy Neapolitan-style crust. Bring friends so that you can sample everything from the most basic (red sauce and grated Parmesan---don't assume mozzarella will be added unless you specifically ask for it) to the wondrously garlicky white pizza loaded with fresh-shucked clams. As it eschews the gourmet topping trend, Pepe's may disappoint jaded palates. But it has more than managed to stand the test of time for pizza purists.
