Cava Tapas & Wine Bar Description:
Chef Gregg Sessler brings some avant-garde flair to traditional tapas cuisine that goes beyond the traditional snacks. Co-owner John Akar has Lebanese roots so look for a vibrant plate of meze which includes a robust, creamy hummus and a salty feta. Go on to dishes like roasted medjool dates stuffed with manchego and wrapped in salty, crisp ham or grilled Portuguese sardines with gigande beans and piquillo peppers. More substantial dishes are still manageable but all is best shared as in Kurobuta pork with cubes of sweet watermelon, spicy wild arugula, toasted hazelnuts and a Banyuls vinaigrette. Wine comes by the sip, half glass or full glass and cocktails are key. Be sure to reserve a seat at the chef's "table," four seats at the bar where you can interact and watch the chef make his signature paella with chicken and chorizo, or sit outside in the patio dining area where you'll feel like you've stumbled on a bit of Barcelona in New England.
