Koto Sushi Bar Description:
When Hajime "Haji" and Songmi Keruma opened Koto in downtown Nashville in 1985, the city was still stuck in a culinary slumber. Over two decades later, the prevailing culinary trade winds have changed, but the meticulous assembly of top-flight rolls here hasn't deviated one iota. Tuck into delicacies a cut above the usual sushi fare such as giant clam, as well as several rolls named after Music Row regulars, such as the Hook Roll---a powder keg of yellowtail, green onion and spicy sauce---named for musician Gary "Hook" Pfalzbot. As an unexpected surprise, knockout Korean dishes include marinated short ribs (galbi), the stock and trade of Keruma's homeland. The spicy squid stir-fry is also a good choice. Koto is most crowded at lunch, when downtown worker bees descend for sushi to-go. At night, it's relatively easy to get a table, especially considering the quality and freshness of the fish, so dinner is a sort of undiscovered treasure here. The atmosphere is sleek and refined, and the lovely mahogany bar makes for a memorable backdrop.
