The view of downtown Nashville at night is killer, but what will keep you glued to your seat in Allium is the French cooking. Nothing is ever too complicated here: from roast duck to croque monsieur, to steak frites and other straightforward dishes. But once you taste the kitchen's skill in extracting the boldest statements from the simplest ingredients, you won't miss the frippery or effrontery of the stereotypical Continental dining experience. The peppercorn demi-glace on the steak frites is eye-popping, the mustard-crusted salmon is an ideal demonstration of contrasts in texture, and the bacon-pear gnocchi are delectable enough to give you pork-scented dreams for weeks on end. The wine list is a joy to explore, especially since only three bottles clock in at over $50. But there's no cheap filler; affordable but audacious French producers are the rule. For dessert, the crème brûlée is caramelized almost---but not quite---to the point of no return, and it's tasty stepping so close to the edge of burnt. The pistachio-chocolate three-layer cake is also a wise choice. Some might find the decoration lacking (there isn't any), but that dynamite view more than makes up for it.
