The capital of truly Italian pizza in Miami is Pizza Rustica. Pizza is all that is done here---all day and all night---and the possibilities are as endless as your imagination. It's a hole in the wall, a virtual dust devil of flour, equipped with twelve enormous deck-ovens and a tiny eat-in counter flush against the plate glass windows that peer out over Washington Boulevard. With thick or thin crust, varieties here range from pizza with four cheeses, aromatically spiked with fresh Gorgonzola, to pizza con funghi, chock-full of exotic mushrooms and baked into fresh buffalo mozzarella. Pizza bianca, an authentic sauce-free specialty with fresh arugula and chicken, is outstanding.
