Here that means dim sum. Arrive before opening to avoid getting stuck in a line that can stretch for hours. As servers wheel carts from table to table, choose from scores of such traditional delicacies as har gau (steamed shrimp dumplings), siu mai (steamed pork dumplings), pai guat (spareribs in garlicky black bean sauce), gai larn (Chinese broccoli with oyster sauce) and char siu bau (steamed or baked buns filled with Chinese roast pork).
