Since the Mandarin Oriental, Miami hotel is located on prestigious Brickell Key, it is not surprising that its high-end restaurant, Azul, offers unparalleled vistas of Biscayne Bay and the Miami skyline through floor-to-ceiling picture windows. Many sophisticated diners, however, find the view of the place's extensive raw bar just as spectacular. But the main attraction is the cuisine of chef Clay Conley. Impeccable upscale (and often organic) ingredients are manipulated into creative Asian, Mediterranean, New American and Latin-influenced combinations with polished elegance and ease. Start with a signature cocktail such as the lychee martini before enjoying hamachi "tiradito" with Peruvian chilies and ginger, or Maine lobster salad with carrot-coconut emulsion, hearts of palm, grapefruit and avocado. Playful reinvention is one of Conley's strong suits---hence "steak 'n' eggs" with beef tartare and carpaccio, crispy egg yolk, and truffled artichoke vinaigrette; and a deconstructed "New England clam chowder" with crunchy-coated clams, pork belly confit and malt vinegar. Move on to heartier dishes like the grilled churrasco served with lobster fried rice, hedgehog mushrooms and yuzu-soy butter. Desserts might include a goat cheese wonton with poached pears or a chocolate trio composed of a chocolate hazelnut bar, milk chocolate-lime ice cream, chocolate banana cake and ginger ice cream. A top-flight wine list overseen by Cynthia Betancourt, and service choreographed by maƮtre d' Patrick Calvarese contribute to making Azul one of Miami's premier dining destinations.
