Rob Evans and Nancy Pugh (owners of Hugo's) opened this small European style fry and sandwich shop. The exposed brick restaurant is expensive compared to other sandwich shops, but it is considered a gourmet version of the concept.
Chef Rob Evans, who opened Duckfat across the street from his restaurant Hugo's, is famous for playful yet challenging cuisine. Here, he channels his talent in simple and comforting directions. The rich panini are arguably the best sandwiches in Portland, featuring a variety of more unusual meats (duck confit, ham, pulled pork, meatloaf, bacon, tuna), cheeses (muenster, goat, provolone, cheddar, Swiss, mozzarella) and other ingredients (eggplant, tomatoes, capers, pesto, basil, slaw, cranberries, apples and pears) in pleasing combinations. Do not miss the cone of twice-cooked Belgian fries deep-fried in rich duck fat---also among the city's best, served with artisanal mayo. There are terrific soups made from scratch---always puréed into soothing colors---and uncomplicated salads, as well as milkshakes and beignets for dessert.
