Just when you might think you've found your favorite dishes in the casual Vietnamese canon of soups, noodle dishes and rolls, along comes the ever-changing menu at Tân Dinh. Tucked along an unimpressive strip of Gretna, this modest café just may serve the area's best---and most varied---Vietnamese cooking. There are new taste experiences everywhere. For instance, the bouncy, winter-white steamed flour cakes; we recommend the half-dollar-size versions sprinkled with dried shrimp and mung bean powder. Other distinctive items: roasted quail on sticky rice cakes, shrimp paste molded onto sugarcane sticks, tender goat in a coconut curry sauce, a wildly textured salad of jellyfish, pork, shrimp, raw vegetables and herbs. Every table receives a Mason jar of the house fish sauce, moderately sweetened and fired with red chilies, for sloshing over vermicelli salad bowls and the fat spring rolls; and nearly every customer indulges in a bubble tea, such as avocado.
