Hiko Sushi Description:
Hiko is yet another undiscovered gem, hidden in an unpretentious mini-mall along the Sawtelle Corridor. It's not glamorous, but the whitewashed room with contemporary features (track lighting, abstract art, lacquered sushi bar) is smart looking and its proprietors treat customers like gold. That same loving care is applied to the jewel-like fish---picked up fresh every morning---that's prepared here. The sushi bar is strictly omakase (chef's choice); if that's not your style, you'll have to grab a table. A meal might begin with a spiritedly seasoned baby tuna tartare, then progresses on to melt-in-your-mouth toro sushi, live scallops sprinkled with sea salt, a delicate spinach salad, seared king mackerel, ultra-fresh salmon roe, and some of the best uni around. The rice is warm, in the traditional style, and most sushi is straightforwardly but meticulously prepared.
